Coffee Pecan Cake
Coffee cake is as necessary as bread in my household. Now let me be clear: there is mocha cake (which has actual coffee in it) and then there is coffee cake (which has NO coffee in it- but I imagine it is named so that it can be enjoyed along with coffee- I’ll have to do my research on the name!) Anyway, as coffee and tea lovers, my family likes have something to snack on with their drinks. But this cake isn’t just for that- it also makes a perfect dessert after any meal or just for a fun snack. The batter is studded with pecan pieces for the perfect crunch and flavored by the perfect combination of cinnamon and brown sugar. All in all, this recipe is a staple in my household and I hope it will become a staple in yours as well.

RECIPE
For the Streusel:
1. Add all of the dry ingredients to a bowl and stir. Add melted butter on top as stir again until completely and evenly combined. Set aside.
For the Cake:
1. Pre heat the oven to 350F. Grease and flour a 9 inch spring form pan. Or line the bottom with parchment paper and grease the sides if desired.
2. Sift together the flour, baking powder, baking soda, salt, and cinnamon in a bowl.
3. In a separate larger bowl, whisk together eggs, sugar, oil, vanilla, melted butter, and, sour cream.
4. Add the flour mixture half at a time to the wet mixture until evenly combined.
5. To your prepared springform pan, add and spread evenly half of the batter on the bottom. Sprinkle in half of the streusel on top. Add the remaining batter on top of the streusel and spread the batter evenly once again. Top the cake with the remaining streusel.
6. Bake the cake for about 50-60 minutes or until a toothpick inserted in the centre of the cake comes out clean. Cool the cake in the pan to room temperature. Sprinkle with powdered sugar if desired.
Note: The cake should keep for 3 days at room temperature and for 4 days if refrigerated.

½ cup packed dark brown sugar
¼ cup all-purpose flour
1 tsp ground cinnamon
3 Tbsp unsalted butter, melted
¾ cup chopped pecans
Coffee Cake
2 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
½ tsp baking soda
½ tsp ground cinnamon
½ cup unsalted butter, melted
1 ¼ cup sugar
½ cup vegetable oil
1 ½ cup sour cream
2 large eggs
2 tsp vanilla extract
