Classic Red Velvet Cake
Red Velvet is always a classic! Not only is this cake a true beauty, it's luscious rich texture makes it such a delight to eat. I topped off this cake with a classic Ermine frosting- it is a boiled milk, flour based frosting. Before you make any judgements, this frosting is absolutely delicious and is an old-fashioned frosting that carries a lot of flavor. Red Velvet Cake Directions:
1. Preheat oven to 350F degree. Grease and flour (with cocoa powder) three 6-inch cake pans.
2. Beat butter and sugar together for 3-5 mins until pale and fluffy. Add one egg at a time to butter and sugar mixture and mix well between each addition.
3. Add in vanilla, food coloring, and cocoa powder until everything is well combined.
4. Sift the remaining dry ingredients (flour, salt, baking soda) in a separate bowl. Add dry ingredients and buttermilk to the butter mixture in alternating batches (i.e. add 1/3 of the dry ingredients and then add 1/3 buttermilk; repeat twice)
5. Mix in the vinegar until blended well, and add to pans immediately.
6. Divide batter into the 3 pans and bake for about 20 to 25 minutes. Cool on a rack.
Ermine Frosting Directions:
1. Add milk, flour, sugar, and salt to a pan and boil for 3-7 mins until mixture thickens to a pudding-like consistency. Chill in refrigerator for 30 mins or until mixture comes to room temperature.
2. Once cooled, add the boiled milk & flour mixture and vanilla extract to a mixing bowl and beat for 3-5 minutes, until mixture is lighter in consistency. Add softened butter 1 tablespoon at time until well blended.
3. Add softened cream cheese 1 tablespoon at a time until well blended.
4. Beat mixture for an addition 5-10 minutes or until it is light and fluffy.
5. Add to piping bag and decorate and assemble your cakes.

1 tablespoons red gel food coloring
3 tablespoons dark cocoa powder
2 ½ cups flour

1 cup whole buttermilk

Ermine Cream Cheese Frosting:
1½ cup whole milk
4 tablespoons all purpose flour
1 cup granulated white sugar
½ cup (1 Stick) butter, room temperature
8 oz Cream Cheese, room temperature
1 teaspoon Vanilla Extract
1/4 teaspoon salt
